Apple Banana Oatmeal Bake

 

Ingredients

  • 1 3/4 cup Oats

  • 2 Diced Apples

  • 2 Ripe Bananas

  • 1/2 cup Chopped Pecans (optional adds a nice crunch!)

  • 1 cup Oat Milk

  • 2-4 Tbsp Agave or Maple Syrup (use 2 tbsp if using ripe bananas or serving with agave or maple syrup)

  • 1 tsp Baking Powder

  • 2 tsp Ground Cinnamon

  • 1/4 tsp Ground Nutmeg

  • 1/4 tsp Salt

  • Brown Sugar, Cinnamon, and Chopped Nuts (optional) to sprinkle on top

  • Optional Add ins: 1-2 Tbsp of chia seeds, pumpkin seeds, chopped dates, chocolate chips, or dried fruit

Cooking Instructions

  • Preheat the oven to 350 degrees F

  • Mash the bananas in the bottom of the baking dish, mash until there are no lumps. Mix in half the agave or maple syrup until combined. Bake for 11 mins. This helps to sweeten and caramelize the bananas slightly.

  • Mix the oats, baking powder, cinnamon, salt, and nuts in a bowl.

  • Remove the baking dish from the oven. Add the oat mixture to the dish. Add oat milk, chopped apples, and remaining agave or maple syrup and mix together. Sprinkle brown sugar, cinnamon and chopped nuts on the oatmeal.

  • Bake for 30 to 35 mins or until golden on the edges and the center is not sticky and springs back when pressed.

  • Cool for 10 mins, then slice and serve warm with agave or maple syrup, vegan butter or whipped coconut cream or non dairy yogurt, fresh fruits or other toppings.
