Vegan Meatloaf

 

Ingredients

  • Vegan Meatloaf

    • 1 Package of Beyond Meat Ground “Beef”

    • 1 Package of Lipton Onion Soup Mix

    • 1 Slice of Crumbled Bread/Crackers (gluten free if you have a gluten sensitivity like me)

    • 1 Egg Substitute Egg

    • 2 Tbsp of Almond Milk

    • 1 tsp Seasoned Salt

    • 1 Tbsp Garlic Powder

    • 1 Tbsp Onion Powder

    • 1 tsp Pepper

    • Add More Seasonings as desired

  • Vegan Gravy

    • 1/4 cup Vegan Butter

    • 1 tsp Onion Powder

    • 1 tsp Garlic Powder

    • 4 Tbsp All Purpose Flour or Gluten Free (may need to add cornstarch to thicken if you use gluten free flour)

    • 1 cup Almond Milk

    • 2 Tbsp Dark Soy Sauce

    • 2 cups Vegetable Stock

    • 1/2 tsp Favorite Meat Seasoning

    • Salt to taste

 

Cooking Instructions

  • Vegan Meatloaf

    • Thaw the Beyond Burger meat and use your hands to mix the meat, substutute egg, crumbled bread/crackers, onion soup packet, almond milk, salt, garlic powder, onion powder, pepper, and additional seasonings.

    • Grease a loaf pan and place the seasoned meat into the pan.

    • Pre-heat the oven to 350 degrees F and let it cook for 30-45 minutes. Remove from the oven and serve with some gravy, mashed potatoes, and green peas. Yum!

  • Vegan Gravy

    • Melt the vegan butter in a pan and add the onion and garlic powders.

    • In a mixing bowl whisk together the almond milk and flour until it is free of lumps.

    • Add the milk mixture, soy sauce, and vegetable stock to the pan and whisk it together. Bring the sauce to a boil whisking often until the sauce thickens up.

    • Salt and season to taste and drizzle over your meatloaf.
