Vegan Meatloaf
Ingredients
Vegan Meatloaf
1 Package of Beyond Meat Ground “Beef”
1 Package of Lipton Onion Soup Mix
1 Slice of Crumbled Bread/Crackers (gluten free if you have a gluten sensitivity like me)
1 Egg Substitute Egg
2 Tbsp of Almond Milk
1 tsp Seasoned Salt
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 tsp Pepper
Add More Seasonings as desired
Vegan Gravy
1/4 cup Vegan Butter
1 tsp Onion Powder
1 tsp Garlic Powder
4 Tbsp All Purpose Flour or Gluten Free (may need to add cornstarch to thicken if you use gluten free flour)
1 cup Almond Milk
2 Tbsp Dark Soy Sauce
2 cups Vegetable Stock
1/2 tsp Favorite Meat Seasoning
Salt to taste
Cooking Instructions
Vegan Meatloaf
Thaw the Beyond Burger meat and use your hands to mix the meat, substutute egg, crumbled bread/crackers, onion soup packet, almond milk, salt, garlic powder, onion powder, pepper, and additional seasonings.
Grease a loaf pan and place the seasoned meat into the pan.
Pre-heat the oven to 350 degrees F and let it cook for 30-45 minutes. Remove from the oven and serve with some gravy, mashed potatoes, and green peas. Yum!
Vegan Gravy
Melt the vegan butter in a pan and add the onion and garlic powders.
In a mixing bowl whisk together the almond milk and flour until it is free of lumps.
Add the milk mixture, soy sauce, and vegetable stock to the pan and whisk it together. Bring the sauce to a boil whisking often until the sauce thickens up.
Salt and season to taste and drizzle over your meatloaf.
