Garlic Herb Knots

Ingredients
Dough
3/4 cup warm water
3 Tbsp Packed Brown Sugar or Granulated Sugar
1 1/2 tsp Rapid Rise Yeast
2 cups Bread Flour
1/2 tsp Salt
2 Tbsp Olive Oil
Herbs
3/4 cup Chopped Fresh Parsley
2 Tbsp Chopped Chives
7-8 Large Leaves Fresh Basil
4 Sprigs of Fresh Oregano
2 Sprigs of Fresh Rosemary
5 Cloves of Garlic
Garlic Butter
2 Tbsp melted Vegan Butter
2 Cloves Garlic, minced
1 tsp flaky Sea Salt
Cooking Instructions
Warm the water in a small bowl and add the brown sugar. When the water is at 110 degrees F sprinkle the yeast over the water and let it activate (around 5 to 10 minutes)
In a mixing bowl stir together the flour, salt, chives, basil, oregano, rosemary, and garlic. Add in the activated yeast and olive oil. Knead the bread for at least 5 minutes to fully activate the yeast but be careful not to overwork the dough.
Take the dough out of the bowl and clean out the mixing bowl. Lightly oil the mixing bowl and place the dough back into the mixing bowl. Place plastic wrap on top of the bowl and let the dough rise for about an hour. It should almost double in size.
Create 1-inch balls and place them side by side in an 8x8 greased pan and cover the assembled balls with plastic wrap. Let the dough continue to rise for another 30-60 minutes
Preheat the oven to 375 degrees F. Melt the vegan butter and brush over the top of the knots and sprinkle the minced garlic and flaky sea salt over them. Bake for 20 to 25 minutes until golden brown. Remove them from the oven and serve warm with the pasta of your choice or by themselves!
